Vermouth 100% Chardonnay             `                                  

This Vermouth was a project started back in 2021 vintage. Some of the wines from the previous vintage were distilled to make spirit which was used to arrest the primary fermentation of Chardonnay grapes at 30g/L residual alcohol. Herbs were collected from around the Commune of Buttons, some wild and some cultivated and were placed into tinctures for various time periods. These were blended back into the base wine. The vermouth was then aged for 2 years 50% in Barrique 50% in tank.
