Macerated Chardonnay 2022
Parcels of Chardonnay from the Clover and ABC vineyards were added to a rolling ferment for the macerated chardonnay in 2022. The fruit was hand sorted and destemmed then chilled. The fermentation went for 3 weeks with gentle pump overs performed once a day to ensure minimal oxygen exposure and tannin extraction. The ferment was pressed to 60% extraction leaving behind the hard pressings. Elevage was for 11 months in a 1850L fodre on full lees, and bottling took place on February 8th 2023 with 2200 bottles produced. The macerated chardonnay is golden in colour and there is a hint of terpene in the finish, it is smooth and well-rounded with jasmine and orange blossoms, it is loose in the mouth, but the natural acidity from gentle extraction lingers and tightens the wine in the finish
